Our master distillers Samuel Bertrand and Hervé Cormelier, thanks to their experience and know-how, distill according to our traditional method and following the rules of the art. This season should last until the month of February. Cognac is obtained by the distillation of white wines. Once alcoholic fermentation is completed, the white wine has to be distilled to make eau-de-vie. We utilize the charentaise double distillation method in copper stills, a process which has not changed since the birth of Cognac. A two stage process is performed to obtain an eau-de-vie at 70% alcohol of rich aroma and fine palate which will be then aged in oak casks.
